1 lb ground beef sirloin
1/2 of an onion (finely chopped)
1 7oz can of chipotle chiles in adobo sauce (you won't use the whole can)
1 10 oz can of corn (drained)
1 tsp minced garlic
salt to taste
10-12 corn tortillas (soft) *Ready-made tostada shells work just as well and save you the step of frying.
1 cup vegetable oil for frying *You won't need this if using ready-made shells
Garnish with your favorite taco toppings
In a large skillet, brown your ground sirloin along with your onion; just until the meat crumbles and is no longer pink. Drain off any fat. Add in the garlic and mix well. Chop up anywhere from 1-3 chipotles and add to the meat. I usually use 3 chiles and a spoonful of the adobo sauce. Stir in the corn and let heat through. Season with salt as you like. IF FRYING SHELLS: Heat about 1 cup vegetable oil in a small fry pan and fry shells to desired crispness. You will need to use tongs to flip them from one side to the next to make sure they're evenly fried. Let cool and drain on paper towel covered plate. Top each tostada shell with refried beans or beans of choice. (I also like black beans.) Garnish with your favorite taco goodies. *Also delicious when served along side a bed of Cilantro Lime Rice.
