Just because a dish is simple, doesn't mean it can't be fabulous! Or should I say "Fauxbulous." All you need is some soda, a few cups of your favorite BBQ sauce, and voila! You have pulled pork Sandwiches! I feel slightly guilty (tiny bit) about JUST how simple this dish is to make, so I dressed mine up with some coleslaw on top. But even that was done FAUXBULOUSLY. Okay, I might be over doing it with 'that' word. But you get the idea. Simple method. Stunning results. Enjoy!Ingredients:
2-3 Lb pork shoulder roast
1 can dark soda (cola, root beer, or Dr.Pepper)
2 cups of your favorite BBQ sauce, plus extra for serving (I use Sweet Baby Rays)
1 package slider buns or small dinner rolls
Optional Garnish:
1 package coleslaw and 1/2 cup of your favorite slaw dressing. Mix in separate bowl and chill until needed
Directions:
Place roast, soda, and BBQ sauce in your slow cooker (crock pot) and cook on low for 8-10 hours. When meat is fork tender, remove from slow cooker and shred with two forks; discarding any fat. Put shredded meat back in the pot and mix with all the juices. Add additional BBQ sauce and mix well. Using a slotted spoon, serve on toasted slider buns and top with coleslaw.
LESLIE'S NOTES: You can find ready to eat packages of coleslaw in the salad section of your grocery store. Sometimes you can even find the salad kits that come with a little dressing packet inside. Huge time saver! No chopping! Just mix and serve.

ReplyDeleteI love your down home approach to cooking. Its like talking to a sister or friend when I read your recipes. I love that! I tend to shy away from the "stuffy" cooks who use fancy ingredients. I just wanted to share with you my favorite coleslaw dressing-Marie Callanders- it really is the best and I have so many people ask me for my dressing recipe..sometimes I just want to tell them its a secret recipe but I always admit that its store bought..lol.
