Teriyaki Tacos


I love re-creating dishes from restaurants I've been to! There's a place here in San Diego called Islands 'Fine Burgers And Drinks'. Fun place to eat! Just like their name says, it's a place to get a burger and a pitcher of beer. (EXCELLENT FOOD!) Anyway, they also have other menu items, my favorite being their "Yaki Tacos."  Basically, it's teriyaki chicken and grilled pineapple folded up in a flour tortilla. But since today is Fauxbulous Friday...I have a quick version that is every bit as delicious without you having to fire up your grill. (I plan on doing the long/grill version during the Summer.) I absolutely love this fun, refreshing, take on tacos! And I'm sure you will, too! Enjoy!

Ingredients:
4 boneless skinless chicken breasts, cut up into cubes
small amount of salt and pepper to taste
1 cup teriyaki sauce (plus extra for additional basting)
1 cup fresh pineapple, chopped into chunks (or can use canned chunks)
1 package flour tortillas (fajita size)
For Garnish:
chopped lettuce
sliced green onion
sour cream

Directions:
Preheat oven to 350 degrees
Lightly grease an 8x8 or 9x13 baking dish. Season cubed chicken with a small amount of salt and some freshly cracked black pepper and place in dish. Baste chicken with teriyaki sauce. (If you don't have basting brush, just pour it over chicken.) Place chicken in oven and bake for 20-30 minutes, stirring and basting again half way through cooking time. Remove chicken from oven and baste with additional teriyaki sauce. If chicken seems too saucy, use a slotted spoon and spoon it onto a baking sheet before additional basting. (I do this.)

To serve: Heat tortillas up on stove burner or in microwave oven.
Put a small amount of chopped lettuce in the middle of tortilla.
Add in desired amount of chicken.
Garnish with  pineapple, green onion, and a dollop of sour cream.

LESLIE'S NOTES: You can cook your pineapple if you prefer. Simply add it to the chicken before placing it in the oven. I usually chop mine up, brush it with some teriyaki (using a separate brush) and serve it chilled as taco garnish. So so good! This is one of my all time favorite dishes!
