Balsamic Pea Salad


I know peas aren't everyone's thing...but they are one of my most favorite salad ingredients! And this is most certainly my new FAVORITE side dish! I have been trying to serve it with everything! My husband thinks I'm nuts! (What's new...)

Don't let the combination of mayonnaise and balsamic vinegar throw you off! It actually comes together to make a savory and slightly tangy dressing. PERFECT for this dish!

The original recipe is from allrecipes, and called for feta cheese. The majority of my family is not a huge fan of feta, so I played around with the ingredients and came up with something I knew they'd all agree on. It's absolutely delicious!  Enjoy!


Ingredients:
1 16 oz package frozen green peas
1/2 cup pine nuts, toasted
1/2 cup chopped green onions
1 cup diced mozzarella
1/2 cup mayonnaise
2 Tbs balsamic vinegar
1/2 tsp black pepper
Directions:
1.) Place peas in a colander and run luke warm water over them until they're thawed. Place in a large mixing bowl.
2.) Toast your pine nuts in a small skillet over medium heat; just until lightly browned. Set aside.
3.) In a small bowl, combine your mayonnaise and balsamic vinegar. Whisk to thoroughly combine.
4.) Stir sauce into peas. Add in your chopped green onion, mozzarella cubes, and pine nuts. Stir gently to combine.
5.) Season with pepper, stirring once more. Garnish with additional pine nuts and green onion if you like.
