Tomato Bisque

I found myself at home today without a car. Not a big deal, right? Wrong! I woke up in the mood for soup. More specifically, Tomato Bisque. And here I was without any tomatoes. So with a trip to the grocery store out of the question, I reverted to one of my oldest and most favorite cooking tricks. And just in time for Faux Friday! I swear I did not plan this! (pinky promise) Sometimes things just fall in to place.




Ingredients:
1 jar marinara sauce (I like Mario Batali's Tomato Basil for this)
1/2 cup chicken stock
1 cup heavy cream
1 tsp cornstarch 
salt, to taste
garlic powder, to taste
red pepper flakes, to taste
Directions:
In a medium sauce pan, slowly bring your marinara to a simmer over med/low heat. Stir in your chicken stock, turn heat to low, and let continue to slowly heat. In a small bowl whisk your cream with the cornstarch. Slowly whisk into your marinara. Continue to heat on low flame. Taste before adding any seasonings, then add them to your bisque a few dashes at a time; tasting as you go until desired flavor. 

I like to serve mine with some Homemade Croutons, a few sprinkles of Parm, and some basil ribbons. So good! You will not believe it was THIS easy to make! Enjoy!

*NOTE - Stick with marinara only when making this soup. It doesn't work with meat, mushroom, or any type of wine sauce. I have been making this for years and can tell you, the better quality the sauce, the better the soup. I only use Mario Batali's or Rao's.
