Chicken Spaghetti (Casserole)



This is my Aunt Susan's Chicken Spaghetti. She shared her recipe with me a few years back and it has been a family favorite ever since!

I always serve it just like this with some homemade cheesy bread and a salad. It's perfect as a make-ahead dinner or as a "make and take" dinner for potlucks or for a friend in need. Just recently, I brought it over to a friend who had surgery. When she was feeling better, she called and asked for the recipe so that she could bring some over for a friend who just had a baby. I love that!




Ingredients:
4 to 6 chicken breasts (I like bone in/skin on)
1 tsp salt
1/4 tsp pepper
1/2 tsp garlic powder
1/2 tsp Italian seasoning
1-2 bay leaves
1 Lrg onion ,sliced
2 bell peppers, sliced
small amount of olive oil
1 package fresh mushrooms, sliced
1 16oz can diced tomatoes,undrained
1 sm can sliced black olives, drained
1 cup grated Cheddar cheese, plus additional for topping 
1/2 cup freshly grated Parmesan cheese, plus additional for topping 
16 oz spaghetti (cooked according to package directions)
Directions:
Place chicken in large stock pot and fill with enough water to cover chicken. Add seasonings and bay leaves,  bring to a boil. Reduce heat, cover, and cook on med/low for 45 min to an hour. *Definitely an hour if using bone-in. When done, place chicken on cutting board to cool. (save some broth for mixing)
When meat is cool, remove skin and pull meat from bone.

In a large skillet, saute onion and bell peppers in a small amount of olive oil. Add mushrooms and cook another 5 mins. Add in your diced tomatoes, olives, and pulled chicken. Stir well, taste to see if you would like some additional salt and pepper. Let simmer on low while spaghetti is cooking. When spaghetti is done, drain and add back to stock pot. Next, pour in your chicken/veggie mixture. At this time, add about 1 cup of your cooking broth, and mix well. Stir in 1 cup of grated cheddar cheese and half a cup of Parm. Mix together with spaghetti. Pour into 9x13 baking dish and bake at 350 for about 25 minutes. Top with additional cheese and bake another 5 to 10 minutes.

Note: After you remove the chicken from pot, and reserve a cup or two of your broth, add your spaghetti noodles and cook your pasta in the broth. Don't lose all that yummy flavor!
