Let's start the week off with something simple and sweet, shall we? We shall!
These cookies are one of my latest Pinterest finds, and are now a new family favorite.
Seriously, these are SO good! My family cannot get enough of them!
I did play around with the recipe a tad. Not the list of ingredients; just the mixing method. I have made these three times in the last week, and found that by mixing all the dry ingredients together, (before adding them to the creamed butter), really cut down on the flour cloud that I got the first time I made them. You know, the flour cloud? That's when you dump everything in the mixing bowl, turn on the mixer, and...POOF! You're instantly surrounded by a fine white flour cloud. Please tell me I'm not the only one this happens to!
(I am so NOT a baker!)
Anyway...These are so simple. You really must try them! I insist!
Ingredients:
1 cup butter, softened at room temp
3/4 cup corn starch
3/4 cup powdered sugar
1 cup flour
Icing:
1 cup powdered sugar
1 Tbs milk or water
1/2 tsp vanilla extract
Directions:
In a medium bowl, cream butter until light and fluffy.
In a small bowl, mix all dry ingredients.
Add dry ingredients to creamed butter a little bit at a time; blending well each time.
(This keeps the flour cloud from forming)
Drop by small teaspoon fulls onto cookie sheet, and flatten a bit with the bottom of a glass. (Dip glass in powdered sugar to prevent sticking.)
Bake at 350 degrees for 10-12 minutes.
Let cool before icing.
For icing:
Mix listed ingredients in a small bowl until smooth; drizzle over cookies.
Makes approximately 2 dozen cookies

Have you ever added flavoring to the cookies themselves?
ReplyDeleteI have not. But I think almond extract would go great with these! I love them just the way they are; perfectly sweet, with a rich, buttery taste.
